A couple of years ago exploring new places in a room full of people I don't know would have crippled me with anxiety and I probably would have ended up not going. It's crazy what time does for you and recently I've been able to experience some pretty amazing things. One of them without a doubt was when I was invited to the opening of the brand new MexiCO restaurant at the Intu Centre in Derby. What a night!

I've been to many launch nights since the start of Carpe Diem Emmie and I'm always grateful for the opportunity to be able to experience these nights and also get a taste of things I wouldn't have been able to before all of this madness. MexiCO provided me with an evening I wouldn't forget in a hurry.

On Thursday 30th June MexiCO hosted a night full of high quality authentic Mexican food (my absolute favourite), delicious cocktails, around 100 guests, vibrant and eye catching decor and such a buzzing atmosphere you didn't want to leave in a hurry! MexiCo is a brand new restaurant in the Intu Derby on the second floor, next to Pizza Express which offers it's diners a menu developed by Johnny Herandez.

Johnny is reowned for his Mexican cuisine, and just recently cooked for President Obama, so he's now swapped the White House for Derby.




We were able to experience samples of Johnny's amazing array of signature dishes, including salsa samplers, homemade guacamole and chips, pork tostadas and puffy tacos, as well as homemade guacamole and authentic stone ground corn chips (I couldn't stop munching on the chips with the dip! So much so we went through like 2/3 bowls between our group of 4!).

The food samplers were absolutely divine. I even found myself really enjoying the homemade guacamole which I usually stay clear of when having a Mexican but I feel like the one made at MexiCO is a definite game changer for me.

We were also treated some incredible drinks, showcasing the best of what MexiCO has to offer to quench your thirst during your dining experience. The drinks included the classic and contemporary versions of the legendary Margarita, which was so refreshing. The bar team also served us a small selection of fresh fruit and juices too.







The atmosphere in this place along with the decor provided such a buzz in the space and I was extremely excited to see how this would be when it becomes more of a dining experience space. The decor was so bright and uplifting which I feel completely added to it's atmosphere and it was such a Instagram worthy place to picture too!

We were also luckily enough to have a Tequila Tasting session with the guy himself, Johnny Herandez which was so much fun. Not usually being a big fan of tequila I was pretty intrigued to give it a go and see whether my opinion on Tequila could be altered.

We tried three different kinds and I completely surprised myself by being able to hold it down and actually enjoy trying the various different strengths and kinds. It was really good fun to hear about Johnny's passion for the drink and how it could compliment our Mexican meals. I don't think I could have a Mexican meal without a drink with Tequila in it in the future.







I can't tell you how incredible this evening was and I would honestly recommend you to definitely check it out when you can! I can't wait to return to MexiCO next week to try out their menu in full portion size and within a dining experience!
